The history of Tlaxcala is intimately linked to its gastronomy, and up to this day, we are proud to include our pre-Hispanic ingredients that were brought from overseas. These ingredients have created the melting pot of what Tlaxcaltecan cuisine is today. Historically, the same thing happened in the heart of our country, when the first steps were taken towards what would become our great nation.
